You won’t need to go near the stove to make these little salmon patties because we cook the potatoes in the microwave and the cakes in the air fryer. They turn out perfectly crunchy and make for an easy lunch or snack. Serve them with salad or pop them onto a bun and make a tasty burger. Too easy!

* 250g baby potatoes
* 415g can pink or red salmon, drained, flaked
* 125g can corn kernels, drained
* 40g (1/2 cup) grated cheddar
* 2 green shallots, thinly sliced
* 1 egg, lightly whisked
* 35g (3/4 cup) panko breadcrumbs
3 Method / Steps
Step 1
Pierce each potato with a knife then place it in a microwave-safe bowl. Cover and microwave on High for 8 minutes or until tender. Set aside until cool enough to handle then remove the skins. Use a fork to mash the potato in a large bowl.
Step 2
Add the salmon, corn, cheese, shallot, egg and 15g (1/4 cup) breadcrumbs. Season. Stir until combined. Divide the salmon mixture into 8 equal portions (about 1/4 cupful each) and shape each into a patty. Place remaining breadcrumbs in a shallow bowl—dip patties in breadcrumbs, pressing gently to coat.
Step 3
Spray patties with oil and place them in the basket of an air fryer (see notes). Cook at 200C for 10 minutes or until crisp and golden. Serve.
